Potatoes, cheese and Silesian-style franks are another traditional ingredient combination that breaks stereotypes! We have another must-try recipe for you!
Ingredients (several portions, the bigger the appetite, the less to share):
– 1 package of traditional Silesian raw, smoked Frankfuterki (Silesian-style franks)by Berger
– approx. 1.5 kg potatoes
– 150 g raw, smoked skinless bacon
– ½ kg semi-fat or full-fat white cheese
– 3 medium-sized yellow onions
– 500 grams sour cream or natural yoghurt
– 100 grams butter
– 1 teaspoon dried wild garlic, finely chopped (if you have access to fresh, this will be even more aromatic)
– 2 sprigs of chopped dill
– balsamic vinegar
– freshly ground pepper and salt to taste
Preparation:
Peel and boil the potatoes in salted water (they should be very soft). Cut sausages into small pieces and fry. You don't need to add fat, the fat from the sausages should be enough. Finely dice the onions, add salt and pepper and simmer in the butter, covered, for a few minutes until soft.
Dice the bacon and fry in a pan until most of the fat is rendered. Add the stewed onions and bacon together with the fat to the potatoes. Everything should be warm. Then add the white cheese, wild garlic and sour cream/yoghurt. Mix it all up and mash with a potato masher.
Finally, we can form a cylinder on the plate from the potatoes prepared in this way, place the fried sausages on top, sprinkle with dill and a touch of balsamic vinegar.
