Shakshuka is a dish well-known in many Eastern European cuisines. It is a dish that is simple to make, requiring basic ingredients, but which is delicious and comforting, and this is important during the autumn months. This time we offer a new, original version of this meal.
Polish-style Shakshuka
Ingredients:
– 2 large ripe tomatoes
– 1 tablespoon/14 grams clarified butter
– small clove of garlic, finely chopped
– 100 grams red pepper
– 70 grams Berger sausage
– salt and freshly ground pepper
– pinch of sweet paprika
– 2 large eggs
– one-quarter cup / 15 grams chopped parsley and chives
– one large red onion
Preparation:
Wash the vegetables, scald the tomatoes, remove peels and dice Put finely chopped sausage into a hot pan with clarified butter and fry until browned. Add the finely chopped garlic and sauté briefly.
Add the tomatoes and diced peppers. Simmer over low heat for approx. 15 minutes. Then evaporate excess juices and season with sweet paprika, salt and pepper. Make two cavities and crack the eggs into them, making sure to leave the yolks intact (!), add salt and cook until the whites are set. Top with chopped chives and parsley and serve with fresh bread.
